Prepare quinoa as usual. Thoroughly wash away the saponins, then cover with half the volume of water in a thick based pan (more will be sloppy), and gently heat til the water just simmers. Put on a firm lid, switch off the heat and leave at least 20 mins to absorb the water. Allow to cool and mix with any finely chopped and diced crunchy veggies you have to hand. (red and yellow pepper, spring onions, fine beans, sugar snap peas.)
Pile in a souffle dish or ordinary bowl, and turn upside down. Sprinkle with tamari or Braggs Aminos , or leave plain, and garnish with herbs.
