Soak a handful of almonds for 12 hours and throw away the soak water and soak in fresh water for another 12 hours. They’ll keep in the fridge for 2 or 3 days so do enough for a few breakfasts. If you have any digestive sensitivity, squeeze off the brown skins between finger and thumb, otherwise blend them as they are, with a little rejuvelac, water or apple juice. Add an apple roughly chopped, and blend again. Finally add some blueberries, blend briefly and pour into a bowl. Eat at once.
