You can substitute corn salad for purslane, equally light and fresh, or if neither is to hand, use rocket.
Rinse the purslane gently, it grows close to the ground so will be splashed after the rain. Toss with small spinach leaves and scatter with chopped asparagus tips. Eat it with a ripe avocado or with a few seed crackers.
