Eat avocadoes and the stones for lots of reasons:

Protein, fibre, “good” fats (mono unsaturated fats), mainly oleic acid, thought to help prevent diabetes.

Plant sterols which help to balance the hormones both in men and women. They are rich in carotenoids (precursors to vitamin A) including beta carotene,  which is well known in cancer treatments.

Lutein and zeaxanthin which are used in supplements to improve eyesight. Vitamin C, vitamin K, potassium, vitamin E and B vitamins, and a much higher proportion of dietary fibre than any other fruits.

So eat a ripe avocado, with salad, or in a guacamole, but don’t forget the stones!

Sophie and Ken tell me they roughly chop the newly liberated stone and blitz in the Vitamix, before adding the rest of a green smoothie. At the moment I am chopping mine, drying them in the bottom of the oven or in the dehydrator, and when I have a few, grinding them to use as a protein and fibre sprinkle on just about anything.
